KEK PUDING BERLAPIS PANDAN

 

Bahan Span
6 biji telur
130 g gula kastor
130 g tepung gandum
sedikit pewarna hijau
85 g mentega, dicairkan

Bahan Puding
200 ml santan (dari 1 biji kelapa)
410 ml susu cair
300 ml jus daun pandan (diambil dari 8 helai daun pandan)
1 1/2 camb serbuk agar-agar segera
1 biji kuning telur
60 g tepung jagung
90 g gula kastor
secubit garam
sedikit pewarna hijau

Cara membuatnya
- Putar telur dan gula kastor hingga kembang.
- Masukkan tepung gandum dan mentega secara berselang-seli hingga habis. Pastikan ia ringan (banyak gelembung buih) kerana ini akan menentukan samada ia lembut atau sebaliknya.Akhir sekali, bubuh pewarna hijau.
- Tuangkan adunan ke dalam tin bulat 22 cm yang sudah dilengser dan dialas dasarnya dengan kertas kalis minyak.
- Bakar kek span selam 15-20 minit pada suhu 200 C atau hingga masak. Biar sejuk sebelum dipotong mendatar 5 keping.
- Untuk puding, kacau semua bahan hingga sebati.
- Jerang di atas api perlahan dan kacau hingga pekat. Biar suam sedikit.
- Ratakan sedikit puding pada dasar tin bulat 22 cm. Letak sekeping kek dan lapiskan lagi dengan puding pandan tadi di atas dan sekelilingnya. Ulangi sehingga kek dan pudding habis.
- Biarkan sejuk sebelum dipotong.
